Classic Breakfast Gravy

This is our basic family recipe. Please excuse the lack of exact measurements, I was taught to eyeball it!
Bacon grease (fresh or solid is fine) : about 1 cup
Flour : about 1/2 cup
Milk (evaporated or whole milk is best): about 2 cups
Salt : generous amounts, to taste, but don't be conservative
Pepper: about 1/2 tablespoon
Heat the grease in skillet, add flour slowly while whisking to avoid lumpage!
Add milk while whisking. Adjust amount to thin flour mixture. add s and p. Never stop whisking! When gravy is mixed well, semi-thick and starts to bubble it's ready. Taste for salt content! Too much , add more milk, too little....grab that shaker!
